For the pizza dough:
250g Plain yogurt
250g Flour
2 TBSP Olive oil
10g Baker’s yeast

50g Winter truffle paste
20cl Heavy cream
60g Fresh black truffles
For the pizza dough:
In a bowl or a mixer, add the flour, baking powder, a good pinch of salt, olive oil and yoghurt. Knead the mixture until it forms a cohesive paste, if it is too sticky, add a little bit of flour and continue to knead until dough is taut. Rest in a bowl for 30 minutes covered with a cloth.
After 30 minutes, knock the dough down and form a ball. Flour the dough as well as the rolling pin and roll into desired thickness and diameter. Transfer the pizza dough onto a baking tray lined with non stick paper. Prepare your pizza topping by mixing the truffle paste with the heavy cream and spreading it evenly across the dough. Cook for 10-15 minutes depending on your oven. Check on the pizza every so often to make sure it doesn’t overcook or burn.
Once it’s cooked, generously grate the black truffle over the pizza and serve immediately.
It is an ideal pizza for an aperitif with a side salad.
