Whole black truffles, the excellence of the black diamond all year round
The fresh black truffle is a very special seasonal product that’s only available for a few months a year.
Due to strong demand from the chefs and restaurants we serve, we developed preserved truffles using a sterilisation technique called “appertisation.” This allows us to offer preserved truffles all year round.
Thus, while a fresh black truffle can normally only be stored for about 7 days, a preserved black truffle in a jar can be stored for several years, as long as it’s not opened.
A unique professional sterilisation technique
To be preserved, our black truffles are first sorted while fresh by our Truffle Masters according to their size, shape, etc.
They are then put in jars and sent through an autoclave to be sterilised. Thanks to this technique, the flavours of the black truffle are preserved, to the delight of true gastronomes!
To meet the needs of as many customers as possible, we’ve developed two different appertisation techniques:
- “First boil,” in which the preserved truffle is cooked only once in order to preserve practically all of the truffle’s precious aromas; this is the preferred method of professionals, chefs, and fine gourmets;
- What we call the “sure value,” in which the preserved black truffles are cooked twice while still maintaining their unique flavours.
Our preserved whole truffles can also be labelled “extra,” meaning they have a beautiful, regular spherical shape, for a singular aesthetic and exceptional flavour, or they can be labelled “1st choice,” with a less regular shape, but still with excellent flavours and aromas. All of our truffles in jars are “brushed,” meaning that they’ve been cleaned by us before being preserved.
How should you cook and enjoy preserved truffles?
The preserved whole truffle is ideal for distinguished, refined meals thanks to both its aesthetics and flavours.
Like the fresh truffle, the preserved truffle has its own aromatic profile. So, don’t be surprised to discover new flavours that are slightly different from those of the fresh truffle.
Appertised truffles should be heated and added to other ingredients to release all of their flavours: you can combine them with simple, neutral ingredients like rice, pasta, or eggs to bring out every aroma. They should be cooked gently, gradually increasing the heat and not going over 50°C. Alternatively, you can add the preserved black truffle at the very end of cooking.
The amount of preserved truffle to use is an important consideration: you should use 10 to 15 grammes of truffle per person, or 10% of the total ingredients.
Because the preserved truffle has already been cooked, it can’t be grated. However, it’s perfect when chopped or added whole into a dish (for example, a pâté).
Cooking tip
Keep that precious truffle juice that’s left in the jar. It’s wonderful and can be used to make bases for sauces, risottos, vinaigrettes, and more.
