Regarding delivery
You should expect it to take up to 72 hours to prepare the order, then add to that the delivery time, which varies from one carrier to the next.
- Chronopost/Chronofresh: 24 to 48 hours
- Colissimo: 48 to 72 hours
- DHL: 48 hours
Your fresh truffle is placed in a bag, which is in turn placed in an insulated box. It is then shipped via Chronofresh in a refrigerated lorry to guarantee the product’s freshness.
When you order fresh truffles, yes, you need to be present to receive your package.
If you were away when your truffles were supposed to be delivered, you must contact Chronofresh and provide them with your tracking number and name so that they can reschedule your delivery.
Check your email and your text messages to see if you’ve received any new instructions from the delivery company. If you have not, contact our customer service.
Regarding fresh truffles
Fresh truffles can be stored in the refrigerator (at between 2°C and 5°C) in a sealed container and covered with absorbent paper, which should be changed every other day.
Once they’ve been delivered to you, your fresh truffles can be stored for about 7 days. Note, however, that like any fresh product, the duration may vary slightly from one product to the next. As such, the best thing is to enjoy your truffles as soon as possible.
No matter the variety of fresh truffle, in general, you should use 10 to 15 grammes per person, or 10% of the total amount of ingredients.
No, fresh truffles should not be cooked. Black truffles can be gently heated, but they are the only variety that can stand any heat. All the other varieties (summer, Burgundy, and Alba white truffles) should be grated over your dishes just before serving.
Yes, you can freeze fresh truffles. When doing so, you should place the fresh truffle in a freezer-safe container or bag. It can then be stored for up to one year. To enjoy a frozen truffle, you should simply grate it while still frozen over your dishes.
Fresh black truffles can be heated and grated over your dishes at the end of cooking. You should use low heat because the truffle’s aromas are volatile. The black truffle also has an affinity for fatty ingredients, which absorb its flavours very well. As such, you can make truffle-flavoured butter, cheeses with truffle, etc.
An appertised truffle is a truffle that has been put into a jar and then sterilised at a high temperature in an autoclave. This process maintains the black truffle’s many flavours and aromas, while preserving the truffle so that it can be enjoyed throughout the year.
Regarding dried mushrooms
Dried mushrooms should be rehydrated in warm water for 30 minutes to 1 hour, depending on the type of mushroom.
Our dried mushrooms have been dried immediately after harvesting. This maintains their flavours while allowing them to be stored for a very long time (up to several years). Conversely, fresh mushrooms can only be stored for a few days after harvesting.
