150g Laughing Cow Cheese
15g Fresh black truffle

For the ravioli dough:
You can find a good ravioli dough in a Italian delicatessen or in certain upscale supermarkets.
For your ravioli, prepare 10 cm squares.
For the ravioli stuffing:
Cut the truffle into small pieces. In a salad bowl, mix the celery leaves, the cut truffle and the laughing cow cheese. Season with salt and pepper to taste.
To make the ravioli:
In the center of your ravioli dough squares, place the stuffing, then egg white around the edges and fold one side over the other in order to close the ravioli.
For cooking ravioli:
In a saucepan, add in the chicken broth (add water if you wish for it to be less salty) and bring to a light boil, cook the ravioli until al-dente or desired preference. Remove raviolis from the liquid and set aside. Shave generously with black truffles and serve.
