30-40 g of fresh summer truffles (allow 15-20 g per person)
1 good burrata
Lettuce
Tomatoes
4 slices of sandwich bread
Vinaigrette
Instructions:
Cut then chop a portion of the summer truffles, and leave the rest to be cut into fine slivers
Break up the burrata and incorporate the truffle pieces into it
Season to taste
Make your vinaigrette
Grill your bread in the frying pan
To assemble:
Use a pastry cutter to cut circles out of the bread then top with some of the burrata and truffle mix
Using a mandolin slicer, cut fine slivers of summer truffle and place them to form a rosette on your burrata
Add a few lettuce leaves
Dress with your vinaigrette and a pinch of fleur de sel
Finish off with some pretty coloured cherry tomatoes
Simply enjoy!
