1 liter Vegetable broth or pot-au-feu broth (Fat removed)
Fresh whole black truffles or canned black truffles. (allow between 7 and 15g per person)
Black Truffle Juice to taste
2 nos Carrots
1 nos Parsnip
Small bunch of broccoli
Salt and freshly ground pepper
Black Truffle Detox Broth
Peel the carrots and parsnip. Cut them into thin slices Using a mandolin, and cut the brocoli into small florets. Keep aside.
If using fresh truffle, slice using a mandolin. If the truffle is canned or jarred, use a knife instead.
Heat the broth and add the broccoli. Let it cook a few minutes then add the slices of carrot and parsnip. Continue cooking for 2 minutes.
Season with salt and pepper, and add in the truffle slices. Sprinkle with finely chopped parsley. Divide into bowls and serve.
If prefered you can add:
• Either a little truffle juice in your broth or a teaspoon of black truffle olive oil in each bowl before serving.
