2 nos White Boudin Sausage
Fresh black Melanosporum truffle

Baked white boudin with black truffle
Preheat your oven to 180° C (350°F).
Cut the sausages into half a centimeter slices and arrange on a baking tray lined with non stick paper. The slices must not touch to prevent sticking. Drizzle lightly with olive oil.
Bake for about 10 minutes.
About 5 minutes in, turn the slices of boudin over and continue to cook for another 5 minutes.
Once the blood sausage is cooked, remove from the oven and generously shave black truffles over it.
Finally season with a little fleur de sel and serve.
