2 nos Buckwheat crepe

Comté Cheese as needed, sliced or grated
4 slices Colonnata Bacon Lardo
20g Fresh black truffles
Warm some butter in a frying pan and place the buckwheat crepe in it. Crack an egg in the center of the crepe and arrange the Comté cheese around the egg yolk without covering it. Top the Comté cheese with the Colonnata Lardo.
Close the crepe up by folding each of the side towards the middle exposing only the egg yolk. Let the pancake cook over a medium low heat in the frying pan until the bottom is crispy and the cheese and lardo has melted.
Finally top generously with fresh black truffle slices and enjoy it fresh and hot out of the pan.
