All of the deliciousness of black truffle, but in pieces!
Our black truffle pieces come from high-quality, fresh, whole black truffles whose aesthetics have been altered by cold, drought, harvesting, or transport.
These pieces are then put in jars and cooked at a high temperature in an autoclave. This is a process known as “appertisation” and it preserves the black truffle so that it can be enjoyed year-round.
When preserved this way in jars, the truffle pieces can be stored for several years.
After being opened, the entire contents of the jar should be used. If that’s not possible, we recommend that you keep the pieces in their jar with the lid firmly shut or in another sealed glass container, in the refrigerator, and that you finish enjoying them within a few days.

Preserved black truffle for a unique culinary experience
Preserved truffle pieces have the same flavours as whole preserved black truffles, which differ slightly from the flavours of fresh truffles, offering a unique culinary experience.
To fully savour the truffle pieces, they need to be heater, but not to more than 50°C.
Truffle pieces go perfectly with fish, meat, risotto, and mashed potatoes. You can adapt them to your recipes by chopping them because preserved truffles cannot be grated.
Additionally, determining the amount of truffle to use is an important consideration when making recipes with preserved truffle.
Uses 10 to 15 grammes of truffle pieces per person, or the equivalent of 10% of the total ingredients, so that everyone can fully enjoy the flavours.
Cooking tip
Because truffles have an affinity for fatty ingredients, you can also mix your truffle pieces with butter or cheese (preferably one that’s mild in flavour) and let the mixture rest in the refrigerator for 24 hours so that the truffle flavour infuses throughout.
