A jar of black truffle deliciousness
Our black truffle shavings come from fresh black truffles.
The black truffles are first sorted by our Truffle Masters. The most beautiful ones remain whole, while the others are used to make products like truffle shavings.
After sorting and preparation, the truffle shavings are put into jars and sterilised in an autoclave at a high temperature. This sterilisation process is called “appertisation.”
This procedure makes it possible for you to enjoy the flavours of black truffle all year round and to store your black truffles for much longer! The shavings have the same flavours as whole truffles; the only difference is their appearance.

Made up of fine strips and small pieces of black truffle, our truffle shavings are perfect for adding to omelettes, scrambled eggs, or gratins. They add an extra little crunch, in addition to the delicious flavours of black truffle.
To unleash their full aromatic profile, the truffle shavings should be heated. Use a slow cooking method with heat not exceeding 50°C. This will preserve the delicate flavours of the black truffle.
Add at least 15 grammes per person of truffle shavings to our recipes, or the equivalent of 10% of the total ingredients. This will allow everyone to fully enjoy the flavours of our black truffle shavings.
We recommend that you completely finish the jar of black truffle shavings after opening. If that’s not possible, you can keep them in the refrigerator in a sealed glass container, such as their jar. They should be used within a few days.
Cooking tip
Black truffle shavings are also perfect for adding the deliciousness of truffle to cheeses like Brie, Camembert, and Mont d’Or. Once you’ve added the truffle shavings, let them sit with the cheese for 24 hours in the refrigerator so that the truffle can infuse the cheese with all of its flavours.
